Turn out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic. Place in an oiled bowl, cover with plastic wrap and let rise for 1 hour or until doubled in size.
To shape the pretzels: Divide the dough into 8 equal pieces and roll each piece into a long rope about 20 inches long. Shape each rope into a pretzel shape by crossing one end over itself and twisting it back on itself so that both ends meet at one side of the pretzel. Bring them together so they overlap slightly and press to seal them together securely. Place on 2 parchment-lined baking sheets while you shape all of them. Cover with plastic wrap and let rise
